Project Waistline Recipe!

I have the greatest recipe for those in Project Waistline! Here it is:

2 cups of Crisco
4 cups of butter
3 tbsp of oil
5 king size Snickers

Ok I'm kidding but really here is a really good veggie dish that is so simple to make. A lady at work told me how to make it and I loved it...so did Mindy!
  • Saute' some zucchini and a few onions together until cooked at the desired texture. Then just add some corn and salt and pepper. You can even add chicken,turkey or meat to it and serve over brown rice. It's so yummy and easy!

Back from a great weekend in the mountains! This was my first time going to the Uinta Mountains...I was so impressed. It was so great to get away from busy schedules and cell phones and just enjoy a little piece and quiet. We had a great time hanging out, canoeing, napping, campfires, eating and the best of all...playing dominoes!

Reunion in Califor-ni-a!

I realize it's been a while since I've blogged and I apologize. I promise to take blogging more serious.
Last week I went home to Danville for a Brandi Family Reunion. We all meant at my parent's house for a couple of days of fun. We had a great time! I forgot how beautiful the Danville is..has it always been that "bootiful"? It was a busy couple of days filled with extended family get-togethers, TONS of swimming, San Francisco trips, and all the places to eat in Danville.
We were finally able to take a family picture. They turned out pretty good considering the amount of young children that were there. You can take a look at them at http://www.kellinicolephoto.com/. I remember how much we loved sliding down stairs growing up. It was fun to see some of the kids do it. I really love sliding down stairs!!!


Davis went down the stairs everytime someone else did. He wouldn't let anyone go down without him. He was laughing so hard...he's so adorable! This was about 24 hours before he got a 103 degree fever. Poor guy!

Oh Say Can You See?....


This pictures reminds of the great times the three of us had when we were roommates. When Mandy came over yesterday to hang out before we took a trip to Target, we decided to "practice" for the 4th of July. So we put on a patriotic mix that Mindy put together and laid on our family room floor....like we were watching fireworks. We all love the firework show at Sugarhouse Park and I guess our excitement got the best of us. It's going to be a great show!

New York, New York!

Last week my sisters, Cheryl and Cindi, and myself went to the Big Apple for 5 days. Leaving our lives and families behind us(in my case, my roommate Mindy), we left in search for an adventure filled with scary subway rides and thin crust pizza. Unfortunately my sister Tami wasn't able to come because Jackson still has to go everywhere she does. But even though we missed her and wished that she was there, we had a blast! We did just about everything you could possibly do as a first time visitor.

But it didn't last long! Out of no where it started pouring rain. All of the buses were full and the only place for us to go was on TOP of the bus. They were nice enough to give us ponchos.









Sorry I don't know how to flip the picture. Anyways, here is the Manhattan Temple. We did a session and I couldn't believe how quiet it was for being in a HUGE city. It of course was beautiful inside.

After the temple we had the most amazing panini I have ever had! I still have dreams about it!


There really is a museum for everything!
One of my favorite nights was Sunday. It was Cheryl's birthday and my dad was sweet enough to treat us to dinner at Tavern on the Green. It was good food, but I loved the ambiance the most. It was so beautiful inside. After dinner, we walked through Central Park...at least while it was light outside. It was a really fun night.

ShowBiz


Last week my sisters and I went to New York City! It was a blast! I'm planning on posting pictures soon...I promise. On Friday night we were able to get tickets to a new show called Curtains starring Tony Award winner David Hyde Pierce. It was so hilarious! My sisters and I laughed the whole way back to our hotel. I highly recommend this show to anyone. . I've decided to start giving Showtune Saturday Nights a try...that's how great this show is!

Camping at Skullcrack

Over the memorial weekend, I finally was able to go camping. We went up by a cute little town called Huntsville. It's through the Odgen Canyon and back in the mountains. I really was beautiful. We finally were able to find a spot to camp at in a campsite called Skullcrack. Weird name I know. It was so nice to get away and do some hiking, fishing(which I had never done before) and a little sunbathing. I kept thinking of Girls' Camp and the fun times we had there. I still can't believe we wouldn't shower for a whole week....that's so gross! Anyways, if you're ever up north looking for a place to camp, check out Skullcrack!!

A Whole New World

On May 7th, 2007 my life changed. I had Lasik Surgery done on my eyes. It was one of the craziest things that has ever happened to me. This is me after the procedure in the hallway of the office. I was so excited that I could SEE! Even though it was blurry and they were intensely burning, I could see almost perfectly without contacts or glasses moments after the surgery. At one point of the surgery everything went completely black....the creepy part was that I knew my eyes was clamped open.
And weeks later I'm loving my 20/15 vision. It was worth every penny!
